There is nothing better than enjoying fresh eggs for breakfast or dinner. Eggs are a very healthy food that you should include in your diet often.

Although eggs can last in the refrigerator for a long time.  There is nothing better than buying them fresh.  And eat them shortly after to get the most out of them.

The freshest eggs of the highest quality you can buy are without a doubt the ones you find on a farm. Although it is incredibly easy to find eggs in any grocery store, they are usually not as fresh as they may seem, because the commercial egg industry exposes them to specific processes designed to prolong their freshness so they will last longer on the shelves. .

Some eggs, for example, are subjected to partial freezing and cold storage for several weeks before being delivered to shops and supermarkets.

While it’s still okay for us to eat older eggs, they will not retain the delicious taste that fresh eggs have, and when you cook them, they will not be as perfect as you might have hoped. But how do you know if they are fresh or not?

The Julian date


The egg industry in the United States and elsewhere requires that egg cartons contain a printed series of numbers ranging from 000 to 365. This number is known as the Julian date, and it shows when the eggs were cleaned and packed in the egg carton. If a carton is stamped 000, for example, it means that the eggs were packed on 1 January. If it has the number 213, it means that they were packed down on 2 August.

This date is accompanied by another date that tells you the expiration date for selling the carton of eggs to the consumer. A box of eggs stamped with the number 015 and the date 28/02 means that the eggs were packed down on 15 January, and that they can be sold until 28 February or a month and a half later.

Who wants to buy eggs that are over six weeks old when you can get completely fresh eggs? It is quite certain that no one would do that.

The flow test to check how fresh an egg is

Because you may not always want access to the egg carton to check how fresh they are. Is there an alternative method that will show you how fresh the eggs you plan to eat are.

The test simply involves carefully placing an egg in a cup of water. If it is fresh, it will sink and settle to the bottom of the cup.

As the eggs get older, the more they will float in the water. This is because the eggs will lose fluid through the pores of the shell over time. Which means that the weight of it is reduced and there is more air inside the egg.

Why is it so important to eat fresh eggs?


Just like with all other types of food, the fresher they are the better the taste and nutritional content. But when you buy eggs, you do not know how fresh they can be. At first glance, they may look very fresh due to the storage process they went through, such as exposure to cold.

These results are more obvious when you cook older eggs at home and you realize that they do not have the same color and taste as a fresh egg. Fresh eggs will always have a more pleasant taste, a darker egg yolk, and the white can be easily separated from the egg yolk instead of being almost mixed with it.

Eggs contain dissolved carbonic acid in both the egg white and the egg yolk. Over time, the acid is released through the pores in the shell, which leads to an increase in the pH value, and together with it you can get some effects such as:

  • Loss of consistency
  • An egg yolk that is no longer centered
  • An egg white that is less transparent because it loses color over time.

Should you wash your eggs?

It is never advisable to wash eggs, as it can weaken or damage the shell, the eggs’ protective barrier from microorganisms. When you wash eggs, the cuticle layer is weakened. It is the part that is attached to the shell and prevents bacteria from entering the egg. Washing eggs will increase the risk of infection.
